10 year Barleywine “X” – Barrel Aged Barleywine

As the clock hits 10 for Cellarmaker we will release this blend containing several of our choicest barrels. Ten Year Barleywine brings together young and old barrels for a refined beer that has vibrancy and depth. 20% of the blend is barleywine aged for 8 months in Savage and Cooke Lip Service Rye whiskey barrels; 30% barleywine aged for 16 months in Weller Special Reserve Bourbon barrels, 30% barleywine aged for 16 months in Stagg Jr. Bourbon Barrels; and 20% Imperial Stout aged for 25 months in Heaven Hill 10 year barrels. We present this as a special offering that we know you will enjoy, but it also doubles as a birthday gift for ourselves… $25 per 375mL bottle

2023 Bourbon Blammo Bottles – imp stout with coconut 13.1%

Bourbon Blammo is the bourbon barrel aged version of our massive coconut imperial stout BLAMMO! For the 2023 release we blended five oak barrels: one stout aged for 26 months in a Heaven Hill Bourbon barrel; the second stout rested in a Blanton’s Bourbon barrel for 36 months; the third and fourth barrels were also Heaven Hill but this stout aged for 20 months. Finally about 10% barleywine was blended in after aging in a Willett Family Estate Bourbon barrel for 21 months. We then conditioned the blend on 35 lbs of organic toasted coconut per barrel. As always, it is ridiculous! 375 ml Bottles $25

“Nilla Nest” BA Imp. Stout w/ Vanilla – 14.8% abv

Horus and Cellarmaker are back at it again with the release of our third round of collaboration barrel aged stouts. Nilla Nest was aged in Willett Rye barrels for 22 months and then conditioned on 3 pounds per barrel of vanilla beans from Tanzania, Peru and East Timor. The vanilla has layers and layers of decadent flavor ranging from Luxardo cherry to brownie batter, creme brulee to orange citrus. $27 per 375mL bottle

“Vastness of Space” BA Imp Stout – 13.5% abv

Barrel aged stout fans get ready to blast off as we release our newest batch of our classic imperial stout The Vastness of Space. For this version we aged the entirety of the batch in 10 year Old Rip Van Winkle barrels for 20 months. The rich chocolate and roasted elements of Vastness is complimented and enhanced by the char, vanilla and bourbon heat of the Old Rip Van Winkle barrels. $25 per 375mL bottle

“Edge of Time” BA Barleywine – 15.3% abv

The Edge of Time is a single oak aged Barleywine. This is Batch 2 which conditioned for 14 months in 3 Willett Bourbon barrels. Pronounced fig and date character is intertwined with baked cinnamon rolls, toffee drizzle and oaky vanilla from the slow maturation. We recommend allowing your pour too warm to close to room temperature and allowing the carbonation to diminish so that all of the rich flavors may speak without restriction. $25 per 375mL bottle

“Simmer Dim” BA Barleywine – 14.5% abv

A unique and first of its kind project, Simmer Dim is the first beer in the United States to be aged in scotch whiskey barrels from Highland Park Distillery located on the island of Orkney in Scotland. This Barleywine was skillfully crafted with almost 90% Scottish malted barley from Simpson’s Malt, which is also one of the malts that Highland Park incorporates in their whiskey. During aging in the oak, which formerly held Spanish sherry before Highland Park, the beer develops intensely rich attributes resembling toffee and dried fig and date. The peat smoke of the scotch imbues Simmer Dim with the most intriguing campfire background that plays nicely with some boozy heat. $22 per 375mL bottle
