Ten Year Barleywine brings together young and old barrels for a refined beer that has vibrancy and depth. 20% of the blend is barleywine aged for 8 months in Savage and Cooke Lip Service Rye whiskey barrels; 30% barleywine aged for 16 months in Weller Special Reserve Bourbon barrels, 30% barleywine aged for 16 months in Stagg Jr. Bourbon Barrels; and 20% Imperial Stout aged for 25 months in Heaven Hill 10 year barrels. 	11th Anniversary Barleywine We’re having a little fun for our 11th birthday with our first ever adjunct barleywine release. After blending together 24 month bourbon and rye barrel aged munichwine with 18 month bourbon aged barleywine, we roasted up 400 lbs of pecans and infused them into the blend. That’s 2 lbs of pecans per gallon! Our talented brewers then added a pound per barrel of Madagascar vanilla bean and a touch of cinnamon to create a boozy liquid pecan roll! You will be entranced by the patisserie aromas of pain au chocolat, pecan pie filling and Little Debbie’s pantry followed by decadent flavors of pecan morning buns, caramel drizzled french toast and bourbon barrel aged maple syrup. 	Simmer Dim - Scotch Aged Barleywine This Barleywine was skillfully crafted with almost 90% Scottish malted barley from Simpson’s Malt, which is also one of the malts that Highland Park incorporates in their whisky. During aging in the oak the base beer develops intensely rich attributes resembling toffee, molasses, wild flower honey soaked almonds, Turkish delight and rustic rye loaf. The peat smoke of the whisky, restrained as it is, still imbues Simmer Dim with the most intriguing campfire background that plays nicely with some boozy heat. 14.5% ABV $22.00	Simmer Dim - Scotch Aged Barleywine quantity
	Works & Days Barleywine The 2024 vintage is a masterful blend of five components, marrying 60% single oak-aged Barleywine with 20% Double Oak Aged Barleywine and 20% Double Oak Aged Munichwine. Enticing aromas of Tawny Port, cherry cordial, Tahitian vanilla, bourbon-soaked dates, and chinotto draw you in. 	Double Barrel Batch 2000 - Double Barrel BA Barleywine As we did with Batch 1000, Batch 2000 is celebrated by the brewing of a Barleywine designed with all the knowledge and wisdom gained over one thousand brews. Batch 2000 was transferred into Weller Reserve and Blanton’s Bourbon barrels for 10 months. We then further rested it in a mix of Savage and Cooke Burning Chair Bourbon and Lip Service Rye barrels for an additional 13 months. 	Midnight Sea - Barrel Aged Imperial Stout Batten down the hatches and prepare yourself for a collaboration three years in the making. Toppling Goliath and Cellarmaker are releasing their own renditions of Midnight Sea, a blended bourbon-aged imperial stout. In February of 2020, the dark malt masters of Toppling Goliath visited our San Francisco brewery and devised a deeply rich stout recipe. This inky, oily magic was first aged in a variety of bourbon barrels including Weller, Early Times, Dickel, and Woodford Double Oaked. We then further aged Midnight Sea in a second set of Weller barrels. When it was time to bring the components together we worked closely with the crew from Toppling Goliath to create a profile that could stand on its own but also be half of a two-part blend with Toppling Goliath’s own version of Midnight Sea. The confluence of these stouts is reflected in the artwork of the bottles where two parts of the same scene join into a more complete picture. 14% ABV $45.00	Out of stock

	2021 Cellarmaker Chardonnay Our 2021 Chardonnay is comprised of fruit from the English Hill and Taylor Ridge Vineyards, both located between Sebastopol and the Pacific Ocean. Extreme weather swings from warm days to cool foggy nights and mornings create an expressive Chardonnay with a high impact tropical fruit aroma. Oak character is subtle as the barrels we used were just shy of neutral. Flavors and aromas of guava, pineapple, lemon, lilac and subtle toast. 	2020 Cellarmaker Pinot Our 2020 Pinot Noir has fruit sourced from the West Sonoma Coast AVA, aged 22 months in neutral French Oak Barrels with 50% whole cluster fermentation. This wine is packed with aromas of cranberry, strawberry preserves and rose petal. On the palate we get bing cherry, cedar, blackberry and white pepper. 	2021 Cellarmaker Syrah Our Syrah is grown at 2700 feet elevation in Mendocino. Fermented with 50% whole cluster in new oak.
